Ambercup squash look a lot like a pumpkin, but have a much different flavour! They are orange on the outside and inside and have a very sweet flavour. The texture is quite dry and very smooth.
Ambercup are a relative of buttercup and have a very similar texture and flavour.
To prepare Ambercup squash, cut it in half and scoop out the seeds. A great way to eat is to cube it, and drizzle with olive oil and seasonings, then roast on high heat until tender. The skin becomes very soft and can be eaten with the flesh!
Squash can be successfully stored for up to 6 months. Store in a cool location and wipe the outside with a bleach water mixture to help it last.
