My mom, Tamra, stumbled upon this way of enjoying tomatoes a few years ago. It is a slow roasting technique that condenses the amazing sweet summer flavour of tomatoes. The taste is incomparable - they are almost sweet with none of the acidic taste you sometimes get with other tomato recipes. Once I tasted my first bite of these tomatoes, I was converted! Roasted romas are now a staple in my house, as well as in all the Davison homes!
This recipe freezes like a dream. Truly, there is no compromise in the taste or texture after spending months in the freezer. For that reason, we make batches and batches (yes, my house smells like garlic all summer) and stack them up in the freezer.
