Rachel’s Rhubarb Cake

Cook Time: 40 mins

Servings: 12-15

Ingredients:

Topping:

  • 1 cup sugar

  • 1/4 cup flour

  • 1/2 tsp cinnamon

  • 1/4 cup margarine

Batter:

  • 2 eggs, beaten

  • 1 cup sugar

  • 3/4 cup sour cream

  • 1/4 cup milk

  • 1 tsp vanilla

  • 2 cups flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 1/2 cups rhubarb, chopped

  1.  Bake at 350 degrees for 40 mins, or until a toothpick comes out clean
