These apples were picked last fall at their peak ripeness. From there, they were stored in CA storage. “CA” stands for “controlled atmosphere.” The apples were placed in a cooler outfitted with special equipment, and then the oxygen was sucked out of the room. This essentially puts the apples to sleep, because when there is no oxygen the apples will not break down or begin to decompose. The result? Fresh, crisp, juicy apples in May! We have a limited supply, so if you are wanting some apples, don’t wait too long.
